Vanillin is an organic compound extracted from the bean of the vanilla tree. The harvested seed pods of vanilla are cured for
several months as they lack a distinct vanilla flavor. Vanillin is used extensively in the food industry as a flavoring agent for ice
creams, cakes, chocolates, biscuits, and breads.
Since the demand for vanillin is so high, it is now produced synthetically, in addition to being extracted from the seed pods of
vanilla planifolia. For synthetic production, vanillin is synthesized from guaiacol. The two major forms of vanillin produced
chemically are ethyl vanillin and methyl vanillin. Ethyl vanillin occurs in the form of white to light yellow colored crystals and has
a mild flavor. Methyl vanillin is stronger and is used extensively as essence.
