It has become a big thing for the whole society: food safety. Plenty of people generally realized that they must pay more attention to the food safety which may threaten their lives.
At beginning the author points out how "Soul food" has become the scapegoat for diseases, such as obesity, heart disease and diabetes among African American. Terry said , “it is the downfall of the health and well-being of African Americans. It is true that African Americans have some of the highest rates of obesity,diabetes,heart disease, and some cancers of group” (82). Yeah! That’s true because of instant soul food not the traditional one. Traditional soul food is good for people, “complex nutty flavor of grits stone-ground” (Terry 82). In the early time, African Americans have used that food to survive for two generations , that means “diverse,creative and comprised of a lot of fresh, local, and home-grown nutrient-dense food” (Terry 83). Terry defends the traditional soul food by shifting the blame to the instant one by saying that it is "a dishonest representation of African American cuisine" (Terry 82).
“Why does soul food become unhealthy currently?” Such a question has aroused into my mind. That contains many factors, including the popular media . In many TV and movies illustrate viewers the distorted African American’s food culture and images, which leaves many people misinterpration of that. With the development of modern technology it is easy for popular media to influence people’s thought and life. So we must figure out what is true or false in the contemporary era of information explosion. Don’t lead by the nose without your own thought. The danger lies with many managers who only want to “coast along”.
Another important reason is that fast paced way of life.While many traditions have been disappearing, “most self-proclaimed soul food restaurants, a considerable amount of soul food cookbooks, and the canned and frozen soul food industry...
