Reduction in Wait Times
The first challenge was to reduce the wait times of our customers by establishing the optimum amount of tables in the restaurant to improve efficiency of the staff and profits, while reducing the amount of customers lost while waiting for service. Originally, Mario had 14 tables for 4; 0 tables for 2; 4 Wait; and 2 Kitchen Staff. To increase the efficiency of the restaurant, the 14 tables for 4 were reduced to 10 and the tables for 2 increased to 8 without changing the Wait and Kitchen Staff. Below are the results of the decision to increase the tables for two to 8 tables:

Improve the Ordering System and Oven Efficiency
The next challenge revealed that two of the manual ovens went down and the waiters ordering system had to be improved to reduce customer wait times. The decision had to made about either using two manual ovens or buying up to two Plax ovens costing the restaurant $4500 each, in addition to implementing a new Menu Point ordering system. After careful consideration of Mario’s love for the manual ovens, one Plax oven was purchased and the Menu Point ordering system was implemented. This strategy reduced average customer wait times to 5.76 minutes and lost sales to $390. Below are the results of implementing the new Menu Point ordering system and one Plax oven:
