Report Description
Calcium Propionate is an organic salt formed by the reaction of calcium hydroxide and
propionic acid and it is primarily used as a food preservative (mainly in baked food
products) due to its ability to prevent growth of harmful microorganisms such as molds.
Although it is not toxic to these organisms, but it restricts them from reproducing and
causing health risk to humans.
Several studies indicate that calcium propionate is the one of the safest food preservatives
used. It is approved by FDA as GRAS in North America. Apart from baked food items, it is
also used as a preservative in chocolate, processed meat, processed cheeses, fruit
preserves, and tobacco industries.
The global market of calcium propionate is moving up the ladder in the antimicrobial
category of food preservatives due to the growing concerns of customers towards fresh
food, hygiene and long shelf life products.
